Copenhagen’s Kødbyen once had the highest density of butchers in Europe. When most meat businesses fled the city in the 1980s, the district vanished from collective memory until the early 2000s, when the municipality launched a ‘Meat and Creativity’ program. It combined existing food production businesses with creative industries, such as art galleries, restaurants and design workplaces.

Today, artists, designers, photographers, film producers and restaurateurs have taken over vacant spaces once filled with swinging butcher’s knives. Restaurants like Superbon are part of the Copenhagen Food Collective (Cofoco), which opened its 19th restaurant in Kødbyen under the iconic Bosch sign. The back room is packed with old-school arcade machines where diners can challenge friends to everything from basketball to Space Invaders.
