When Grand Duke Vytautas brought Turkic warriors from Crimea to guard his 14th-century Lithuanian castle, he probably didn’t anticipate their legacy would be cucumbers. Once the Karaim were no longer needed as defenders, they pivoted to market gardening and became famed for growing gherkins, now a Lithuanian staple. Their wooden houses still line the street to the castle, each with three windows: one for God, one for Vytautas, and one for guests. Today fewer than 200 Karaim remain in Lithuania, making them one of Europe’s rarest cultures.

The warriors who once guarded a duke’s bridge now survive mostly in pickle jars and window count. Six hundred years is a long time to hold a job. Longer still to be remembered for quitting it well.
